I think for the raw food lifestyle juicing is an important step. Start out with light greens like celery, lettuce and cucumbers. When you get used to that then you can incorporate more darker greens that have more nutritional value like endive, escarole and mustard greens. Juicing is essental as it assimalates and breaks down the micronutrients for maximum absorbtion. Most of us have a compromised intestine from years of conventional refined foods so juicing is an important step.
