Molé
Verde. This recipe reminds me of something I tried years
ago in England—a dish called “mushy peas,” somewhat
like creamed corn. While “mushy” may sound uninspiring,
it had a lovely comforting creaminess. I've added a Mexican twist
to the “mushy peas” which makes for a “smashing”
(as they say in England) experience! “Molé” means
“concoction”—usually a rich, reddish-brown sauce
that often includes chocolate. This green molé is quite different—it’s
a gorgeous smash of peas, cilantro and lime.

Victory for a Compulsive Overeater

was a fat formula-fed baby and a chubby child. A fat person is a starving
person and I was always hungry. I believe I was malnourished from
birth. As a kid I’d drive my mother nuts; right after a meal
I’d be hungry again. The same thing happened at school. My brown-bag
lunch had a bologna sandwich, a bag of potato chips and one of those
cute little cartons of milk. All four food groups were covered because
a potato is a vegetable, right?

Releasing Fear

Ask the Nutritionists
Q: Does the heat of cooking really destroy protein? If so, where
do muscular meat eaters get their protein?
Dr. Douglas Graham's response: In the normal process of digestion,
protein breaks down to proteoles, then polypeptides, dipeptides and,
eventually, amino acids. However, many of the protein bonds "cement"
when heat is applied, converting them into what are known as enzyme-resistant
bonds. The application of heat beyond 161 degrees Fahrenheit causes
enzyme-resistant bonds to form that literally cement one amino acid
to the next, resulting in polypeptides that cannot be further broken
down in the intestinal tract.
